Rushan, special snack in Dali
Rushan or milk fan is a special dairy snack that can be seen everywhere in the streets of west Yunnan’s Dali Bai autonomous prefecture. It is named after the shape of a folding fan.
Rushan is made of high-quality fresh milk of cow or goat. Through mixing with edible physalis, heating, refining and coagulating, it is made into thin slices, and wrapped around a thin rod to dry.
Highly nutritional, Rushan can be roasted, deep-fried, grilled, and mixed with tea. It can be eaten with other dishes, or made into desserts.
A bite of China, a famous Chinese food TV series, made a special episode on Rushan in 2012. Those who travel to Dali should not miss this delicacy.
